With bases empty we had a hitter reach base, thanks to an error, on a play that otherwise would have been called Catcher's interference.

I have been unable to find this specifically covered re scoring - but the rulebook (without reference to scorers) reads thus
"...However, if the batter reaches first base on a hit, an error, a base on balls, a hit batsman, or otherwise, and all other runners advance at least one base, the play proceeds without reference to the interference."

I would assume then, that the scorer would also ignore the inteference and score the particular play an 'E5' and charge the hitter with an at-bat. Would anyone disagree?

correct.. there is no interference to score, there is no interference on the play at all if the batter reaches first
